Ingredients
Peas (ready shelled) | 180 g |
Pasta (“ditaloni” or “tubetti” small macaroni recommended) | 130 g |
Water | 450 g |
White wine | 30 ml |
SINFONIA EXTRA VIRGIN OLIVE OIL | 20 ml |
Fresh Italian spring onion | 1 |
Grated Parmigiano Reggiano Cheese | to taste |
Salt | to taste |
Instructions
Place the fresh spring onion in the bowl and chop: 5 seconds at speed 7, push the onion to the bottom with the aid of a spatula and add the oil, then fry for 3 minutes at 100°, speed 1. Add the shelled peas and the white wine and boil off the wine for 5 minutes at 100° with anticlockwise rotation at Soft speed.
Add the water and salt and bring to the boil for 10 minutes at 100° with anticlockwise rotation at Soft speed. Add the pasta and continue cooking. Cook for the minutes recommended on the pack with anticlockwise rotation at Soft speed.
Check that it does not dry out too much during cooking and add more water if necessary.
Serve with a dusting of grated Parmigiano-Reggiano cheese and a dribble of raw olive oil to taste.
